Fresh cucumbers and mint are in abundance in many gardens during this time of year, so why not make some refreshing, mildly sweet pickles with a twist.
These honey minted cucumbers are wonderful on their own, but would also taste great on burgers, sandwiches, and salads. - 3-4 Kirby cucumbers, washed
- 1/2 red onion
- 2-3 sprigs mint
1 1/2 cups raw apple cider vinegar
1/2 cup water
1/4 cup honey
1 tbsp peppercorns
1 tbsp kosher salt
2 jars with lids (12-16 oz each)
